4 cups peaches, peeled & sliced
1/2 cup sugar
1 tsp cinnamon
1/4 tsp nutmeg
2 TBSP butter
1 tsp vanilla extract
1 TBSP cornstarch
8 egg roll wrappers
oil for frying
1/4 cup cinnamon for coating
INSTRUCTIONS:
In a saucepan, combine peaches, sugar, cinnamon, nutmeg, butter & vanilla. Cook over medium heat until peaches are soft & juicy. (About 5-7 mins)
Mix cornstarch with water to form a slurry, then stir into the peach mixture.
Cook for 1-2 minutes until thickened. Remove from heat & let cool slightly.
Lay an egg roll wrapper on a clean surface & place 2 TBSP of peach filling in the center. Moisten the edges with water, fold bottom corner over filling, fold in sides, & roll tightly to seal.
Heat oil in a deep pot or fryer to 350° F. Fry egg rolls in batches, 2-3 minutes per side, until golden brown.
Remove & drain on wire rack.
Toss warm egg rolls in cinnamon sugar to coat. Serve with ice cream, caramel, or whipped cream.
