Peaches are the ultimate summer fruit. They hit their peak ripeness between late June and the end of August, which is the perfect time to chill out with some of these refreshing peach recipes.

1. A Fresh Sliced Peach

First on the list is a fresh peach, sliced and ready to eat. Minimal prep and no cook time make this a quick and easy snack for chilling at home or on the go. Just remember to bring a napkin to clean your hands — these refreshing fruits are juicy.

Chill your sliced peaches in the fridge or freezer for extra cooling power. If you have a teething baby, frozen fresh peaches are a great texture to ease achy gums without all the added sugar of regular popsicles.

2. Summer Peach Salad

You can add peaches to almost any salad, but the best salad recipe to pair with our Georgia Peach Balsamic Vinegar or our Peachy Peach Vinegrette combines:

  • Mixed salad greens — try butter lettuce, sorrel, arugula and spinach
  • Cubed fresh peaches
  • Thin-sliced red onions
  • Halved or quartered grape tomatoes
  • Feta or goat cheese crumbles
  • Toasted pistachios or pecans

Assemble the ingredients in a serving bowl, and drizzle the dressing over top or serve it on the side.

3. Peach, Jalepeño and Shrimp Ceviche

Bright, zesty and spicy, this chilled ceviche may just become a summer favorite. For best results, use fresh deveined shrimp. You can also use precooked shrimp if you want to avoid uncooked seafood. In addition to the chopped peaches and jalepeños, you'll also need lime juice, cilantro and avocado.

The trick to making ceviche with uncooked shrimp is to marinate it in lime juice for about an hour and a half, or until it's pink and opaque. The acids in the lime juice will "cook" the shrimp, but you can also use cooked shrimp marinated for around 15 minutes.

4. Peach Salsa

Dickey Farms' fresh peach salsa is a cool, refreshing summer recipe. With chopped tomatoes, peaches, red onion and jalepeños, this salsa goes perfectly with tortilla chips, or wrapped up in a fish, chicken or pork taco. To cut down on the spice, you can remove the seeds from the jalepeños.

5. Pepper Bourbon Peach Ice Cream

For a cold, refreshing dessert, try our Pepper Peach Bourbon Ice Cream. This recipe works whether you have an ice cream maker or not, and the warmth of the Hot Pepper Peach Bourbon Sauce is the perfect complement to the creaminess of the ice cream. Don't feel like making ice cream? Just drizzle a bit of this sauce, warmed up, on top of a few scoops of vanilla bean ice cream for a quick alternative.
