Watermelon & Grilled Peach Salad
INGREDIENTS:
1 seedless watermelon
1/2 lb red onions, sliced
8 fluid oz apple cider vinegar
1/2 oz extra fine cane sugar (salt and pepper to taste)
4 Dickey Farms peaches
2 fluid oz olive oil
2 fennel bulbs
1 bunch fresh Italian parsley
1/2 oz fresh basil leaves
1/2 oz fresh mint leaves
12 fluid oz white balsamic vinaigrette
optional: cucumbers
INSTRUCTIONS:
Peel and dice watermelon into 1-inch cubes; set aside
Place sliced onions in a bowl; add cider vinegar, sugar and a pinch of salt.
Cover and refrigerate to pickle and marinate (best if done overnight)
Cut peaches into quarters, lightly drizzle with 2 fluid oz olive oil and grill on hot grill for 1-2 mins. Turn peaches and repeat (just mark peaches, not cook); remove and set aside to cool
Thinly slice fennel bulbs with a mandolin or slicer; rinse in ice water, strain, and set aside
Pick parsley leaves; roughly chop herbs, leaving large pieces, and set aside
Strain onions. Combine all ingredients in a large bowl and toss with vinaigrette; season with salt and pepper
