Bourbon Poached Peach Crumble


For the Peaches:

1 Dickey Farms Peaches (about 8-10) boil for 1 minute to easily remove skins
1/2 cup brown sugar unpacked
3 tbsp bourbon
2 tbsp lemon juice
1 tsp vanilla extract
1 pinch salt
1/4 cup flour
tbsp butter for greasing baking dish
For the Crumble:
1 cup oats
1/2 cup all purpose flour
1/3 cup brown sugar unpacked
1/2 cup butter
1 tbsp Dickey Farms Honey for drizzling over the top after baking
1 pinch salt



Preheat oven to 350°F

Grease baking dish and set aside

Slice peaches into 1/4 inch slices

Add to a medium sized bowl

Top the peaches with 1/2 cup brown sugar, flour, vanilla, lemon juice, pinch of salt, and bourbon

Mix until the peaches are evenly coated

In a separate medium bowl, add flour, 1/3 cup brown sugar, pinch of salt, and oats and mix well

Cut in the butter with a fork or pastry cutter until well mixed

In the greased baking dish, add peaches in an even layer

Top with the oat and flour mixture

Bake in the oven for 20-25 minutes at 350°F, until the sides are bubbly and top is browned

Drizzle with honey

Serve while still warm and top with vanilla ice cream
