*Recipe from Bayou Woman

INGREDIENTS:

5-6 small Satsumas

1 cup Satsuma peel grated

1 cup Satsuma juice

1 cup sugar

2 cups Dickey Farms Pecan Halves

 

INSTRUCTIONS:

Grate outer peel of Satsumas and set aside

Liquefy fruit sections using a high speed blender, measure 1 cup, set aside

In a large sauce pan, combine Satsuma juice, Satsuma peel, and sugar. Using a candy thermometer, cook over medium temperature, until about 230°F (about 20 minutes; stir constantly to prevent burning).

Remove from heat, and stir in pecans. Immediately spread pecans on greased sheet.

Once cooled, break apart the pecans and store in an air-tight container.
