INGREDIENTS:
2 1/2 cups old fashioned rolled oats
1/4 cup pistachios, chopped
1/4 cup Dickey Farms pecans, chopped
1/2 cup pumpkin seed
1/3 cup honey
1/4 cup Oliver Farm Pecan Oil
1/4 cup packed light brown sugar
1/2 tsp vanilla extract
1/4 tsp kosher salt
1/4 cup chocolate chips
INSTRUCTIONS:
Preheat oven to 350°F.
Line the bottom of 8" or 9" square pan with baking paper.
Add oats, pumpkin seed, pecans, and pistachios and bake for 5 minutes. Transfer to a large bowl.
Combine oil, honey, brown sugar, vanilla extract, and salt in a small saucepan over medium heat. Cook, stirring occasionally until sugar completely dissolves.
Pour mixture into bowl with oats, pumpkin seed, pecans, and pistachios. Mix well. Let cool for about 5 minutes and add the chocolate chips. Stir to combine.
Transfer the oat mixture to a lined pan and then use a spatula to gently press the mixture into the pan. (press hard so the bars will remain together once they cool).
Scatter extra chocolate chips on top of mixture and refrigerate for at least 2 hours. Cut into bars and serve once removed.
