INGREDIENTS:

3 cups chopped grilled chicken

8 oz softened cream cheese

1 can of corn

1/2 cup of green enchilada mix

1 cup shredded pepper jack cheese

1/2 cup Greek yogurt or sour cream

1 jar Terrapin Ridge Farms Hatch Chile Bacon Ranch Dip

 

INSTRUCTIONS:

Season your chicken thighs with salt and pepper and grill them until they reach 165°F internal . Or use rotisserie chicken.

Into a bowl mix together: all the ingredients listed above

Pour it into a cast iron pan, cover with more pepper jack and some cheddar cheese and bake at 350°F for 20 minutes, then top with green onions.
